- 4 cloves
- 2 pieces of cinnamon
- 2 1/2 tbsp salt
- About 2.5 litres of water
- 10-15 mint leaves

Follow these preparation steps:

- Add the ginger garlic paste and fry on low heat for 2 minutes.
- Mix in the chicken pieces and fry on high heat for 2-3 minutes.
- Add the ready-made Biryani Masala and mix well. Fry on medium heat for 3 minutes, adding a splash of water if necessary.
- Incorporate the sliced tomatoes and cook on medium to low heat for 4-5 minutes until soft.
- Lower the heat and add the whisked yogurt. Stir in the chopped coriander and mint leaves.
- Cook on low heat for 2 minutes until oil separates, then cover and cook for 20-25 minutes. Stir after 10 minutes to ensure even cooking.
- If there’s excess water, dry it up for a thicker gravy.
Step 4: Cook the Rice
While the chicken is cooking, prepare the rice:
- In another heavy-bottom pan, add about 2.5 litres of water and place it on high heat. You can include the soaking water for added flavor.
- Once boiling, add Shahjeera, green cardamom, cloves, cinnamon, and salt. Stir well to dissolve the salt completely; the water should be very salty.
- Add the soaked and strained basmati rice to the boiling water, stirring gently.
- Boil for 8-9 minutes until the rice is about 90% cooked, then strain and set aside.
Step 5: Layer the Biryani
To assemble your Chicken Biryani:
- Take a heavy-bottom pan and lay half of the cooked rice as the first layer.
- Spread the cooked chicken with gravy evenly over the rice.
- Add the remaining rice as the top layer.
- Sprinkle some mint leaves on top.
- Close the lid and cook on low heat for 7-8 minutes.
